Sourced from a vineyard situated 950m above sea level, these grapes are grown in a distinctly cool climate. The 2008 season was ideal with summer temperatures cooler than previous seasons, occasional rain throughout the season to keep the vines fresh allowing slow and even ripening. There was dry weather at harvest time. Patience was required when deciding on when to harvest as we had to wait for acid maturity as much as flavour development in the grapes.
The grapes were hand-picked in the cool of the morning then immediately crushed and pressed. The juice required little fining and no acidification. The winemaking process was intentionally uncomplicated. Fermentation was carried out with specially selected commercial yeasts. The juice was fermented in stainless steel tanks to produce clean, vibrant aromas and clear, pure flavours. The wine was stabilised and filtered immediately after fermentation and bottled early to capture the wine in its freshest state. Riesling is a variety that will show restraint and elegance in its youth and fill out and gain weight with bottle age.
