2007 SAUVIGNON BLANC
2007 Vintage Conditions
The vineyard from which we source our Sauvignon Blanc is at the towering heights of 1040m. It has its own micro climate, and even though we were in the grip of one of the worst dry spells on record, the effects on this vineyard were not nearly as severe. Being protected from the hot westerly winds and being a few degrees cooler each day this vintage was more in line with the average
Winemaking Notes
Fermented at 13ºC to enhance tropical aromatic characteristics over a period of 3 weeks. A small component was matured on lees post ferment to build texture. The wine was then blended and fined prior to bottling.
