The 2007 season was similar to the 2006 vintage with a lack of moisture a feature. With the continuation of drought conditions into 2007 irrigation was heavily used due to a lack of moisture in the soil profile at the beginning of the season. Yields were reduced to help the vines through the dry year with fruit quality exceptional.
The Pinot Gris was oxidatively handled in order to control colour. The wine was fermented on light solids to enhance texture and avoid austerity. A small amount of residual sugar is retained and balanced by fresh acidity.
