The vineyard from which we source our Chardonnay is at the towering heights of 1040m. It has its own micro climate, and even though we were in the grip of one of the worst dry spells on record, the effects on this vineyard were not nearly as severe. Being protected from the hot westerly winds and being a few degrees cooler each day this vintage was more in line with the average.
A variety of fermentation techniques are used to obtain several distinct components. This process along with malo adjustment, lees contact and together with oak treatment enables the creation of a complex base wine.
